There is usually a colour change, it smells ripe and there is a change in texture (firmness). The best way to learn how to determine ripeness learn from others in your area who are growing. Trial and error also works.<br /><br />Most herbs are harvested by cutting the plant, never more than a third at a time. They should also be tip cut to promote spreading. Herbs like garlic are dug up. Unless you need an herb to go to seed for seed collection, keep the plant from going to flower by constant snipping.
