Beans should be stored in a dry, airtight container at room temperature. While they will keep indefinitely, they are best used within a year as they tend to lose moisture over time taking longer to soak and cook.
Cook ingredients that you are used to cooking by other techniques, such as fish, chicken, or hamburgers. In other words be comfortable with the ingredients you are using.
